Lakeville’s Green Cafe continues to grow

SALISBURY  — It started with a fairly austere vegan menu but the Green Cafe at Studio Lakeville quickly expanded to be more inclusive of all types of eaters, including those who really like a juicy mouthful of pork belly or a burger once in a while. 

Studio Lakeville opened last February, on Valentine’s Day.Within a few months, owner Leslie Sherman realized that the very clean and healthy menu being offered at the fitness center’s cafe needed to be expanded. She hired chef Sean Killmer of Pine Plains to come in and “beef” things up.

The restaurant is open from 8 a.m. to 3 p.m. daily, but the hours will expand in February if and when the cafe gets a license from the state to sell beer and wine. At that point, Sherman and Killmer hope to offer light eats and festive beverages in the early evening; once summer comes, there will most likely be a dinner menu as well. 

“We want to have like a naughty menu and a nice menu,” Sherman said. 

“And an in-between menu,” Killmer added.

A lot of avocado

The naughty offerings will, in fact, be a pretty moderate expansion of lunchtime menu options that already include a grass-fed beef burger with avocado and cheddar cheese ($14), a turkey-avocado-Swiss and cranberry mayo sandwich ($13) and a pork belly BLT with sriracha mayo ($13). 

There are other lunch items as well as daily specials that on a recent Thursday included French onion soup, corn-cheddar chowder, hot wings with tots (the potato kind) and a ham-and-smoked Gouda panini. 

As tempting as those all sound, the most popular items at the cafe, Sherman and Killmer agreed, are the breakfast burrito ($7.44 including tax; breakfast is served all day) and the huevos rancheros with black beans, avocado, a poached egg and heirloom tomatoes ($8.45 including tax). 

“And we have an awesome Buddha bowl,” Sherman insisted, referring to the most popular item on the “herbivore” menu. The $12 lunch bowl includes baby spinach, roasted broccoli, “healthy grains,” chick peas and of course avocado (there’s no shortage of avocado at the Green Cafe); a winter Buddha bowl has Brussels sprouts, beets, spinach, grains and butternut squash. 

There are many other enticingly layered vegetable dishes on the “nice” menu, ranging from about $9 to $12. 

Everything is available “to go,” and can be ordered ahead. There are even classic “box” lunches and breakfasts, with for example an apple, a sandwich, and a dessert.

“You can choose the sandwich you want off our menu and either order it ahead of time by phone or email, or as you’re going into a class here or preparing to do your workout,” Killmer said. 

Earn that lunch (or not)

Both he and Sherman stressed that the cafe is a separate entity from the gym, and that you don’t need to earn your sandwich by working out first. 

The workout is available, however. The popular Spin classes continue and have been augmented since last year with classes including step aerobics, barre, yoga and cardio kickbox. Classes are $20 each but discounts can be had by purchasing a “pack” ahead of time. 

Gym-only memberships can be purchased for $50 per person; special deals allow the purchaser to get a half-price deal for a spouse or family member (or very, very good friend).

Avoiding temptation

Upstairs at the studio, Sherman’s husband, Jason Sherman, offers counseling in all areas including addiction.  Asked how he feels about the cafe’s application for a liquor license, she noted that part of recovery is learning to be around temptation and being able to say no. 

She also noted, however, that the counseling office is in another part of the building and is accessed by a private entrance (Jason Sherman’s Lighthouse Counseling Center is online at www.lighthouse.online and at 860-485-4571).

Those who choose to sip some beer or wine at the Green Cafe (after a workout or with no workout included) will be able to choose from local, craft beers and from organic wines.

“It’s incredible how many preservatives they put in wine,” Sherman said.

MILLERTON — Veronica Lee “Ronnie” Silvernale, 78, a lifelong area resident died Tuesday, Oct. 7, 2025, at Sharon Hospital in Sharon, Connecticut. Born Oct. 19, 1946, at Camp Lejeune, North Carolina, she was the daughter of the late Bradley C. and Sophie (Debrew) Hosier, Sr. Following her graduation from high school and attending college, she married Jack Gerard Silvernale on June 15, 1983 in Millerton, New York. Their marriage lasted thirty-five years until Jack’s passing on July 28, 2018.

Christine Gevert, Crescendo’s artistic director, is delighted to announce the start of this musical organization’s 22nd year of operation.
