Oat milk gives coffee a creamy boost

Yesterday, I noted the rich, thick foam and exceptionally beautiful leaf design that Lucas, the barista and manager at Provisions at The White Hart inn, had made for my friend Cybele’s latte.

“It’s oat milk,” they both told me.

I generally shun non-milk products because they look watery and I’m afraid I won’t like the taste (I’m not the adventurous eater that some people think I am). This oat milk thing is clearly in a different category.

“It tastes good,” Cybele promised.

“It doesn’t have a strong flavor, like almond milk, for example,” Lucas added.

Cybele let me taste her latte, and in fact the coffee flavor that came through was exceptionally rich and smooth. I added some Oatly — the brand used at Provisions — and it subtly enhanced my  iced coffee’s flavor.

Lucas said that Oatly has only arrived in America from Sweden in the past couple months. Appropriately, Provisions uses the line called Oatly Oat-MilkBarista Edition, which is also available for non-professionals (as are about nine other Oatly drinks, including a special chocolate-flavored one for children).

This is obvious once you think about it, but the Oatly website also points out that oat milk is great on oatmeal and granola (which is normally made with oats).

While Oatly is new to America, oat milk has been around for at least five years. An article in a 2015 issue of Bon Appetit praised it for its flavor and for the creamy volume it adds to espresso drinks.  The article claimed that oat milk can be used as a substitute for cow dairy even in puddings and baked goods. 

And it offers a recipe, or really a technique, for making your own.

Steel cut oats are recommended (they’re easy to find at any grocery store around here). Soak them overnight in a two-to-one water-to-oats ratio (2 cups of water to 1 cup of oats, for example). In the morning, when the liquid has been absorbed, pulverize the softened oats in a powerful blender. It comes out kind of like a brown sawdust, judging from one photo I found online. Use a cheesecloth to separate the liquids from the solids. And there it is.

In light of rising local interest in the centuries-old game of Backgammon, Wednesday afternoon backgammon instruction and play sessions are being offered at The Hotchkiss Library of Sharon. The first such session was held on Wednesday, Aug. 13, attracting two enthusiastic participants, both of whom resolved to return for the weekly sessions.

Expert player and instructor Roger Lourie of Sharon, along with his equally expert wife, Claude, led the session, jumping right into the action of playing the game. Claude chose to pair with Janet Kaufman of Salisbury, a moderately experienced player looking to improve her skills, while Lourie teamed himself with Pam Jarvis of Sharon, who was new to the game.
