Slammin’ Salmon swims anew

MILLBROOK — Slammin’ Salmon is refreshed, it’s exciting and it’s reopened for business.

In truth, the restaurant, at 3267 Franklin Ave., wasn’t closed for very long, just one week, but the changes are many. With white walls, high-beamed ceilings and a smart brown and white tiled floor, the new tables and chairs are a perfect match for the new café concept.

The food, which is no longer primarily takeout, is fresh, delicious, and offers something for everyone. So, how did these changes take place, and why?

The answer may well lie in the fact that Billy Turner, owner, saw the restaurant as something more than a takeout. He also had support from Jesse Barto, restaurant manager, and Cassandra Kovacs, catering director.

They have much in common; all three started in the business at an early age, washing dishes, busing tables and learning the trade from the bottom up. They all worked throughout their school years.

Turner earned a degree in criminal justice but his love of the food industry never left him. He had worked at Slammin’ Salmon twice in previous years, but in October of 2017 he returned to Slammin’ Salmon as owner.

Jesse Barto worked in other businesses, but in 2007 he graduated from the Culinary Institute of America. Having worked twice before at the restaurant, he returned to help Turner work his magic.

Kovacs was a banquet manager at a catering hall for seven years, then she worked with clients to put together wedding packages for another five years.

Slammin’ Salmon has been in business since 1992, once located at another address on Franklin Avenue. Said Turner, who felt that the previous ownership may have been a little distanced from the community, “This is about building back relationships and trust.”

“We asked, ‘What is Millbrook looking for?’ We want to create value for guests, and clean up our little corner of the world,” Barto agreed. “We’re getting the restaurant up to speed. Catering is seasonal; the restaurant is year-round. We’re getting the patio in shape, too.”

Turner says that this venture is a leap of faith, but in the short time the business has been reopened, it’s doing well and people are rediscovering the restaurant.

The menu offers gourmet salads, wraps, paninis, melts and sandwiches, offerings from the grill, as well as homemade soups. There are daily specials as well, and some items may be purchased frozen. Slammin’ Salmon uses local help and local products.

The Gourmet Catering to Go is up and running and the café is planning a grand opening in the spring. Slammin’ Salmon is open from Tuesday through Thursday, from 10 a.m. to 5p.m., and Friday and Saturday, from 9 a.m. to 5 p.m. Call 845-677-5400 or go on Facebook, to slamminsalmonny.

Decked out in a blue T-shirt, khaki shorts and a UConn cap, the man walking along Route 41 in Sharon Wednesday morning looked like others who just enjoy getting out to commune with nature. But U. S. Sen. Chris Murphy (D) had some other thoughts on his mind.

For the ninth year, he was walking across Connecticut to connect with citizens of the state. This year’s route began May 28 in Salisbury and took him to Sharon and Kent for the day.
